About the course...

Learn the principles and application of HACCP with this 2 day HACCP course. Participants, after the successful completion of this course, will have the skill and knowledge to develop a hazard analysis critical control (HACCP) based food safety plan and to oversee its implementation and monitoring.

Our course will help you to understand the Principles of Codex HACCP and how you can use them to develop a HACCP plan which will identify, evaluate and control food safety hazards within your organisation. Our food safety training experts will guide you through the requirements of HACCP in full so you can implement a system that demonstrates your commitment to food safety and manages your risks effectively. This course also meets the formal HACCP training requirements of Australian Retails, GFSI Standards (BRC, SQF) and other relevant Standards.

Course overview...

Participants learn how to develop and document a HACCP Plan in accordance with Codex HACCP. This two-day course covers HACCP’s seven principles, teaching you how to implement and develop the standard, covering:

  • HACCP Plan development and implementation
  • Types of Hazards
  • Emerging Industry concerns
  • Verification and Validation activities
  • Pre-requisite Programs

Our experienced tutors will explore the HACCP standard in-depth, with role-plays, workshops and practical exercises to ensure you go from beginner to expert.

Participants will also learn about applicable Food Safety Legislation, Pre-requisite Program, the Ethics of Food Safety and how to best apply them for the benefit of an organisation.

Day 1 – HACCP Plan Introduction

  • Context of Food Safety

Day 2 – Documenting and Implementing a HACCP plan

  • HACCP Steps 7 to 12 including Workshops
    • Determine Critical Control Points (CCP) including CCP decision tree
    • Establish critical limits for each CCP
    • Establish a monitoring system for each CCP
    • Establish corrective actions
    • Establish verification procedures
    • Establish documentation and record keeping
  • Validation of CCPs
  • Validation v Verification
  • HACCP Plan Review

 

Upon successful completion of the course, each participant will receive a Certificate of Attendance.

Additional Exemplar Global competencies for Food Safety may be attended separately to add additional units of competency.

There are no prerequisites for this course.

During the course, participants will complete a series of workshops which form part of the assessment. Upon the completion of each module there is a short multiple choice exam. Participants receive continual assistance and feedback from the facilitator.

Designed to cater to a variety of people currently involved in the development and / or management of Food Safety Programs, you should attend if you:

  • want to meet the formal HACCP training requirements of Australian Retails, GFSI Standards (BRC, SQF) and other relevant Standards. 
  • want to become an Exemplar Global HACCP Practitioner
  • need to write and implement a HACCP Plan
  • are involved in the Food Safety management process
  • wish to activity participate in a HACCP Team
  • wish to consolidate their existing knowledge into a formal qualification

A food safety industry background is preferred, however prior experience in Food Safety is not essential.
