About the course...

The Global Food Safety Initiative (GFSI), an industry-driven global collaboration dedicated to advancing food safety, believes that to be successful and sustainable, food safety must go beyond formal regulations. Last year, GFSI released version 2020 of the GFSI Benchmarking Requirements, including a new element: food safety culture. Since then, many global food safety certification schemes have upgraded their standards to include food safety culture as an element within their certification standard.

When employees, managers and leaders feel personally committed to food safety, they will do the right thing even when no nobody is watching, and when it is not the cheapest or fastest approach. A strong organisational culture can help create and sustain commitment. Over time, food food safety practices become the normal way of doing things and a source of personal pride. 

This workshop will give you an understanding of Food Safety Culture Governance and Frameworks, key aspects relating to assessing food safety culture maturity and an overview of good practice methodology to help you understand your obligations and Food Safety Certification requirements.

Course content

The first 2-day module is ‘Becoming a Skilled Lead Internal/External Auditor’ course, where you will learn to conduct a management systems audit. This course may be added to our additional modules that cover Quality, Environmental, and OHS management system requirements respectively.


Day 1
Management Systems Auditing - preparation
  • What is auditing?
  • Roles and responsibilities of an auditor and an audit team leader
  • The 6 principles of auditing from ISO 19011
  • Effective audit planning and timetabling
  • Communication skills, interview techniques, and useful questioning methods
  • Setting appropriate audit objectives, scope, and criteria
  • Developing audit checklists
Day 2
Management Systems Auditing – the audit
  • Conducting an opening meeting
  • Identifying objective evidence and taking good notes
  • Reviewing auditing scenarios
  • Writing audit findings including nonconformities and non-compliances
  • Presenting a closing meeting
  • Compiling a meaningful audit report

Upon successful completion of the course, you will receive a Certificate of Attendance which identifies the completion of PwC Food Safety Culture Course.

There are no prerequisites for this course.

Whilst there is no formal assessment, you will complete interactive workshops during the course which form part of embedding an understanding of food safety culture. You will receive continual assistance and feedback from the facilitator.

It is important to remember that there are no take-home assessment items – all of your assessment is completed during course hours and there is no homework.

We can design the course to meet your specific needs and contextualise it to your environment. We are able to target the training to varying levels within the organisation, depending on need, from those in compliance and risk roles through to the Executive.

Prior experience in auditing and management systems is not required.
